Since 1990, I have walked a single path as a food service consultant. Throughout those years, I always felt a longing for deeper on-site experience. This passion led me to establish ‘Ucheongok,’ a traditional cauldron-brewed Hanwoo Seolleongtang restaurant, in January 2024.
Despite my 36 years of consulting experience, running Ucheongok is by no means easy. I am experiencing firsthand how much theory can differ from reality. To be honest, dealing with the constant unpredictability of a restaurant is mentally demanding.
And yet... all my fatigue vanishes the moment I see our customers enjoying their meal. When I hear someone say, "Thank you for being here and serving such delicious food," I feel like I’m walking on air.
Having started this journey late and through much challenge, I am determined to do it right. My dream and goal for Ucheongok is to become a restaurant that is truly valued by our community—and eventually, to introduce Seolleongtang, Korea’s traditional health food, to the global stage.
I will always remain humble and give my absolute best to make this dream a reality. I kindly ask for your continued support and encouragement.
